Mom and I played at a Christmas Eve service tonight. One of the pastors, a Godly man named Peter recommitted to pray and support us regularly as we work on the college. Then we went to another service with the rest of the family. God is doing little miracles each day, giving us the strength to continue. Here is a recipe for a stir fry, a family Christmas Eve tradition:
Peanut chicken pasta
Serves 8
Sauce and marinade
8 Tbsp. Lime juice
4 Tbsp. Reduced sodium soy sauce
4 teas. Water
2 teas. Sesame oil
12 Tbsp. Peanut butter
5 teas. Minced fresh gingerroot
5 teas. Grated lime peel
4 cloves garlic, minced
1 teas. Salt
½ teas. Pepper
Combine ingredients together in a blender. Cover and process until blended. Slice 1 breast for 2 people. Reserve the marinade.
Heat wok. Put 1 Tbsp. Oil in wok, place chicken in wok. Fry until no longer pink.
16 ounces linguine
(or some other long noodle such as
fettucine, spaghetti, etc.)
4 cups chopped fresh broccoli
In a large saucepan, cook noodles according to package directions, adding broccoli during the last 5 minutes. Cook until tender, drain.
4 medium carrots, grated
2 medium sweet red peppers, thinly sliced
4 green onion, chopped
4 Tbsp. Minced fresh basil
In a large bowl, combine the carrots, red pepper, onion and basil. Add noodles, broccoli and lime juice mixture. Toss to coat.
